Understanding Novikov Istanbul: 5 Routes Across 3 Kitchens

At Novikov, the real question is not simply what to eat, but what belongs on the same table. Sushi, hot Asian plates, Italian cooking and Mediterranean seafood share one menu, so every section looks tempting. The best table is rarely the one that tries everything. Pick a direction, then add one or two surprises. These five routes make that choice easier.

What do three kitchens mean?

The menu places sushi and pan-Asian plates under the same roof as Italian and Mediterranean cooking. Everyone at the table does not have to choose one cuisine, but ordering randomly from every section can muddle flavour transitions and make the bill harder to control.

Agree on the table's priority first: raw seafood, hot Asian cooking, Italian comfort, Mediterranean seafood or a compromise for mixed preferences. Then stay within no more than three menu sections.

5 coherent ordering routes

Dish names and availability can change; the route logic is more durable.

  • 1 — Sushi route: Choose one light opening, a limited sushi or sashimi selection and one warm support plate.

  • 2 — Hot Asian route: Keep one dim-sum-style starter, a wok or grilled centre and a vegetable in the same direction.

  • 3 — Italian route: After the starter, make pasta or pizza the centre and do not add a second heavy main automatically.

  • 4 — Mediterranean seafood route: Build around seasonal fish or seafood, supported by salad and vegetables.

  • 5 — Compromise route: Instead of splitting the table, stop at three categories—one sushi share, one hot Asian plate and one Italian centre.

  • Ask the team about portion count before matching dishes to guests.

  • State raw-food, shellfish and allergy constraints clearly.

  • Treat drinks as part of the total route budget, not a separate decision.

Lunch, dinner and last orders

Breakfast runs from 06:30 to 11:00, lunch from 12:30 to 16:00 and dinner from 17:30 to midnight. Last food orders are at 23:30. If you are arriving late, choose a tighter route rather than attempting a long sharing sequence.

A Bosphorus-side table adds plenty to the evening, but do not let the view make the menu decisions. A heavy Italian main after a sushi-led opening—or too many hot Asian dishes around pizza and pasta—can blur the best parts of each kitchen.

Which route suits a group with different tastes?

The fifth, three-category compromise is clearest. Rather than building a full separate cuisine for each guest, share one sushi selection, one hot Asian plate and one Italian centre. It keeps the table communal and limits the number of dishes.
