Seven Dishes That Explain Ottoman Court Cuisine at Deraliye

Deraliye goes beyond the broad label of Ottoman cuisine by giving many dishes a small story. Sour cherry, dried fruit, honey, spice and slow-cooked meat reveal the court kitchen's fondness for sweet and savoury flavours at the same table. These seven dishes are not a challenge to finish the whole menu, but a useful reading list for understanding its direction.

The story behind the dishes

The menu places several dishes beside old cookbooks and banquet records. What reaches the table today is naturally the chef's current interpretation, yet sour cherry, dried fruit, honey and spice create a lovely bridge to the past.

À la carte or the Sultan menu?

Sour-cherry tarhana, stuffed vine leaves, chickpea purée and thyme lamb neck can be ordered à la carte. Goose kebab and katmer belong to the evening Sultan menu, which requires everyone at the table to join the same format.

À la carte is easier if one historical flavour has caught your attention. Choose the Sultan menu when you want a longer story and have time for it. Nuts, gluten, dairy and sesame appear often, so discuss allergies before the order begins.
