Ottoman Cuisine in Istanbul: Where to Try Palace-Inspired Dishes

Deraliye and Matbah in Sultanahmet, or Tuğra beside the Bosphorus: a guide to choosing Ottoman dishes, the right setting and a suitable reservation.

A table set with dishes at Tuğra Restaurant overlooking the Bosphorus

For Ottoman cuisine in Istanbul, Deraliye and Matbah in Sultanahmet and Tuğra Restaurant on the Bosphorus offer three different starting points. The first two can fit into a day exploring the historic peninsula. Tuğra, at Çırağan Palace, calls for a separate evening plan. There is more to the subject than an ornate dining room. Stuffed melon, vine leaves with sour cherries, meat cooked with fruit and fragrant rice dishes invite you to encounter familiar ingredients in different combinations. Choosing a restaurant becomes easier when you decide what interests you about the food, and what kind of meal you want around it.

What does Ottoman cuisine mean on a restaurant menu?

Restaurant menus often place “Ottoman” and “palace cuisine” side by side. The wider Ottoman food tradition should not, however, be reduced to a single palace menu. Restaurants working under these descriptions draw on historical recipes and present them through their own kitchens and contemporary service.

For a diner, the useful question is not only how old a dish is, but what it contains and how it is prepared. Fruit may bring noticeable sweetness to a meat dish; yoghurt, roasted aubergine, spices or acidity may lead elsewhere. Asking a server to explain that balance can be more useful than trying to decode an unfamiliar historic name.

If sweet and savoury combinations are new to you, there is no need to build the whole order around them. Pair one dish you are curious about with another preparation you already enjoy. Exploring a cuisine should leave room for your own appetite and preferences.

Deraliye: fit palace-inspired food into a Sultanahmet day

Deraliye is at Ticarethane Sokak No. 10 in Sultanahmet. Its location makes it possible to finish a day around Hagia Sophia with dinner without moving to another district. The ornate dining room signals a more decorative setting than an everyday lunch counter.

Its published menu includes goose kebab and stuffed melon among the palace-cuisine dishes. Goose kebab combines goose, rice and pastry; stuffed melon brings meat, rice, nuts and fruit into the same preparation. Choose according to the flavours that interest you, rather than ordering both simply because their names sound unusual.

For a first meal, sharing a starter and then choosing individual mains can be a comfortable approach. If you want to share a dish such as stuffed melon, ask whether the portion suits that plan and what else would balance it. Our closer look at seven Deraliye dishes provides another way into the menu.

Matbah: for diners who like to read the menu first

Matbah is within the Ottoman Hotel Imperial at Caferiye Sokak No. 6/1 in Sultanahmet. Alongside its setting near Hagia Sophia, the descriptive menu makes it a useful option for diners who prefer to understand dishes before choosing. The official website lists à la carte and tasting-menu options.

The 2026 à la carte menu includes vine leaves with sour cherries, a starting point for seeing fruit outside a dessert course. Main-course examples include stuffed melon and Mahmudiye, a fruit-accompanied chicken preparation. Tuffahiye, a stuffed apple dish, is marked vegetarian, but contains butter and should not be mistaken for a vegan choice.

Build the meal around the contrasts you want to explore: a cold starter followed by a main that appeals to you may be enough. Choosing one fruit-based main does not oblige you to order another sweet-and-savoury dish alongside it. If considering a tasting menu, ask about its current contents, expected duration and whether everyone at the table must take it.

Tuğra: give a Bosphorus dinner its own evening

Tuğra Restaurant, at Çırağan Palace, presents Ottoman and Turkish cuisine in a Bosphorus-side dinner setting. Give it a separate evening plan, with time for transport and the meal itself. The location may be especially relevant if you are marking an occasion or making dinner the focus of your night.

The official restaurant information requires reservations, specifies a “Smart Chic” dress code and states that guests under 12 are not admitted. These details matter before you choose a table; a family dinner cannot be assessed from the food menu alone.

Request the current menu and ask about the duration of any tasting option you are considering. If the view is a priority, include that in the reservation request, while waiting for the restaurant to confirm a particular table. Outdoor seating can depend on weather and service arrangements. Our Tuğra Restaurant guide offers a fuller look at planning the evening.

Which restaurant fits which plan?

If you are staying in Sultanahmet or spending the day around Hagia Sophia, start by comparing Deraliye and Matbah’s menus. Consider ingredients, service times and the kind of table you want, as well as photographs. Their proximity does not mean you need to try both in one day.

For Tuğra, let dinner be the main evening plan. Transport towards Çırağan, particularly at busy times, needs a different allowance from a short walk within Sultanahmet. Leave space between the final sightseeing stop and the reservation.

When comparing budgets, look at equivalent orders: starters, mains, drinks and any tasting menu. A historical cuisine label does not establish a price category by itself. Setting, service and the dishes you choose all contribute. Reviewing the current menu in advance lets you make the decision before sitting down to dinner.

An ordering approach for a first visit

For two people, one shared starter can leave enough room for the mains. If one of you is curious about fruit with meat or a stuffed-fruit dish, the other might choose a more familiar preparation. This gives the meal some variety without committing everything to the same flavour profile. Ask about the portion and whether rice or another accompaniment is included.

Historic dish names do not explain every ingredient. Nuts, dairy and pastry appear across these menus, so state any allergy when booking and again when ordering. Vegetarian, vegan and free from a particular ingredient are different requirements.

You can decide on dessert after the main course. If an unfamiliar preparation appears on the day’s list, ask what it contains rather than choosing from the name alone. A few dishes chosen with some understanding make a more satisfying introduction than trying to cover an entire cuisine in one sitting.

Where in Istanbul can you try Ottoman food?

Deraliye and Matbah in Sultanahmet focus on this cuisine. Tuğra at Çırağan Palace offers a separate Bosphorus-side dinner option.

Are vegetarian Ottoman dishes available?

Depending on the menu, yes. Matbah’s published menu marks dishes such as stuffed apple as vegetarian. Check dairy, stock and other ingredients directly; vegetarian does not necessarily mean vegan.

Can children dine at Tuğra Restaurant?

The official policy does not admit guests under 12. Reservations and a Smart Chic dress code are also specified, so check that the arrangements suit your party.
