The view can easily overshadow everything when choosing a fish restaurant in Istanbul. A good table is built through smaller details: what arrived that day, whether the price is per kilogram or portion, how fresh the meze is and how the service is paced. Four questions at the fish display

What species is it, where did it come from, what does it weigh and how is it priced? Then discuss cooking. Grilling is not automatically right for every fish: smaller fish may fry well, oily fish suits the grill and a larger fish can work in the oven. Which fish is in season in Istanbul?

Species and catches change from year to year, so ask what arrived that day rather than following a rigid calendar. For a fish that seems out of season, ask whether it is fresh or frozen; frozen is not automatically poor, but it should be clear.
