Taste different families across different days instead of all at once.

- Kazandibi and tavukgöğsü: milk-pudding family
- Muhallebi and rice pudding: softer spoon desserts

Reading good baklava
Layers should be distinct and crisp, the fat clean in aroma and the syrup balanced. Texture softens with time, so busy shops able to explain production timing have an advantage.
Begin with a small portion. Baklava is rich; sharing varieties makes pistachio, walnut, cream and pastry easier to compare.
Match dessert to the meal
A small baklava or künefe can close a kebab meal; fruit or milk pudding stays lighter after a long meyhane or fish dinner. Turkish delight or one pastry is enough on a coffee walk.
If taking dessert away, explain the travel time. Syrup pastries, dairy desserts and cream-based pastry have different storage needs.
Is baklava eaten after every meal?
